Slow Cooker Butter Chicken
This slow cooker butter chicken is so tasty a great mid week meal ... just add to the cooker and go!
Ingredients
- Chicken breasts - 4 (skin removed)
- Natural yoghurt - 1/2 cup
- Garam masala - 2 teaspoons
- Cumin - 1 teaspoon
- Fresh ginger - 1 teaspoon grated
- Cardamom - 1 teaspoon
- Tumeric - 1 teaspoon
- Lemon juice - 1 teaspoon
- Brown sugar - 1 teaspoon
- Butter - 50g
- Onion - 1 diced
- Red chilli - 1/2 diced
- Crushed tomatoes - 400g tin
- Chicken stock - 1 cup
- Cream - 1 cup
Instructions
- Combine all spices together.
- Add spices to yoghurt , tomato and lemon juice and mix well.
- Add the chicken stock and mix well.
- Add the chicken pieces and onion and cook on low for 7 hours.
- Half an hour before serving add the cream and stir.
- Serve with rice yum!
Tip
I also try and add in the occasional veggies like a grated carrot or zucchini. If I make it for kids I leave the chilli out.
