Spinach and Filo Pie
Ingredients
- Spinach - 200g
- Feta cheese - 100g
- Pine nuts - 40g, roughly chopped
- Egg - 2, lightly beaten
- Olive oil - 4 tbsp
- Filo pastry - 150g (6 sheets)
Instructions
- Put the spinach into a large non-stick pan, Pour over a couple tbsp water, then cook over a medium low heat until just wilted.
- Squeeze spinach in paper towel once cooled until just damp, then roughly chop.
- Place in a large mixing bowl with the feta, pinenuts and eggs. Mix well to combine.
- Unroll the filo pastry. Cover with some damp sheets of kitchen paper to prevent from drying out.
- Use two of the filo sheets to line the base and sides of the dish, overlapping if necessary. Leave the excess pastry to hang over the edges of the dish. Cover with half of the spinach mixture, spreading it out to the edges. Cover with two more sheets of filo, then another layer of the spinach.
- Fold the excess filo in over the top, then place the remaining two filo sheets on top, folding the edges under neatly. Brush the top with oil and bake for 25-30 minutes or until crisp and golden.
