Cheesy Potato Gratin

Ingredients

  • Thickened cream - 2 cups
  • Milk - 1/2 cup
  • Dried thyme - 1 tbsp
  • Salt and black pepper
  • Russet potatoes - 8, peeled and cut into thin slices
  • Chives - 10g, chopped finely
  • Gruyére cheese - 250g, grated
  • Parmesan - grated

Instructions

  1. Preheat the oven to 180˚C.
  2. In a large mixing bowl, stir to combine the cream, milk, thyme, and garlic powder. Season with salt and pepper.
  3. In a large oval baking dish, arrange the potatoes in a layer on the bottom of the dish, overlapping the slices slightly. Season with salt and pepper, then drizzle over one quarter of the cream mixture. Sprinkle with chives, then 1 quarter of the cheese. Repeat another 3 times to create 4 layers. Top with a sprinkle of grated parmesan.
  4. Bake for 1 hour or until potatoes are tender with a fork.
