This sweet and tasty Baked Hawaiian Chicken Breast is easy to make and sure to be a family favourite.
With Australian Pure Gold pineapples in bumper crops this winter, now is the ideal time to bring some tropical flavours into your weekly meals.
Serve it alongside crunchy, green beans and be warned, everyone will want seconds! Whilst this recipe takes 35 minutes from beginning to serving it's actually super quick. Simply pop it in the oven and walk away with the timer set - there's plenty of time to do something else in between while its cooking. That's our kind of mid-week dinner! Enjoy!
Baked Hawaiian Chicken with Rice & Pineapple
Prep time 10 minutes / Cooking time 25 minutes / Ready in 35 minutes / Serves Four Adults
Ingredients
- medium chicken breasts - 4
- BBQ Sauce
- Fresh pineapple - 1/2 diced into small pieces
- Grated cheese (cheddar or mozzarella) - 1/2 cup
- Spring onion - to garnish, cut fine
- Salt & pepper - to season
- Rice - 1/2 cup (optional: cooked in chicken stock for flavour)
Instructions
Method
- Preheat the oven to 175 degrees celsius
- Cook 1/2 cup of rice in chicken stock (to flavour) and allow to drain thoroughly
- Beat chicken breasts to a similar size consistency approximately 4cm tall for even cooking, season with salt and pepper.
- Arrange chicken breasts on a baking paper in an over proof dish
- Drizzle with a generous lashing of BBQ Sauce
- Bake until chicken is no longer pink in the centre and juices run clear, this should take approximately 18-20 minutes
- Remove dish from oven. Spoon cooked rice evenly onto chicken, top again with diced pineapple and cover with cheese. The cheese will hold your layers together so don't skimp! Sprinkle with a handful of chopped spring onion
- Return to oven for approximately five minutes and continue baking until the cheese is melted
- For a more crunchy cheese, golden brown exterior you may prefer to switch your oven to grill mode for the last five minutes cooking
Serve your chicken with crispy green beans (or a light, crunchy salad in summer!) The minute you bite into this delicious, sweet meal you'll swear you hear distant ukuleles playing... this is truly Hawaii on a plate!
