Easy Jacket Potatoes
These jacket potato's would have to be one of the easiest and yummiest recipes to make. Perfect for a quick mid week meal!
Ingredients
- Potatoes - 4
- Grated Cheese - 200g
- Sour cream - 4 tablespoons
- Butter - 1 tablespoon
- Bacon pieces - 120 g
- Shalllots - 1 shoot diced
Instructions
- Preheat oven to 220 degrees Celsius
- Wrap potatoes in tin foil so completely sealed
- Pop in the oven for 45 minutes
- Take out and cut 1 quarter of the top off length wise
- Gently scoop 1/2 potato out into a bowl making sure there is enough potato left for the potato to stand on its own.
- Pop the potatoes back in the oven for 10 minutes without foil so the skin goes nice and crunchy.
- Add butter and sour cream to potato in bowl and mix through well.
- Take potatoes out and gently scoop potato mixture back into them
- Top with bacon pieces shallots and cheese
- You can pop under the grill for 5 mins if you like your cheese melted
- Serve straight away and enjoy!
