Hidden Veggie Patties Kids will Love!
I am always looking for ways to hide veggies in my kid's meals, and these little Hidden Veggie Patties are perfect for just that!
A perfect after school snack or add a quick salad for an easy meal.
Ingredients
- Mashed potato - 4 Cups (or sweet potato - I make these with left over mash)
- Finely grated carrot - 1
- Finely grated zucchini - 1
- Onion - 1/2
- Eggs - 2
- Weetbix - 6
Instructions
- In a blender blitz the Weetbix to a fine consistency. You can crumble with your hands but it takes longer. Once blitzed pop aside.
- Place all other ingredients into a bowl and mix together well, making sure the eggs are well mixed it.
- Section off small handfuls and start to roll into balls.
- Roll and coat the balls well in the crushed Weetbix.
- Heat some olive oil in a frying pan on high - just enough to coat the pan.
- Place the rolled patties into the pan and cook until brown on both sides.
- Once cooked, place on a paper towel and plate.
- Serve with tzatziki or any other dipping sauce.
TIP:
Include whatever veggies you like. I use whatever I have left over in the fridge. You may need to add more egg if your ingredients are too dry and if you use pumpkin you may need to use only one egg.
