Lamb Kofta Wraps
Ingredients
- Lamb mince - 1 kg
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Coriander - 3 tbsp finely chopped
- Mint - 3 tbsp finely chopped
- Paprika - 1 tbsp
- Cumin - 1 tbsp
- Cayenne pepper - 1/2 tsp
- Salt and black pepper
- For the yoghurt dressing:
- Greek yoghurt - 250ml
- Garlic - 1 clove, crushed
- Paprika - 2 tbsp
- Lemon - 1, juice and zest extracted
- Salt and black pepper
- Parsley - 2 tbsp, finely chopped
- To serve:
- Rocket
- Tomato - sliced
- Red onion - sliced
Instructions
- Combine all ingredients for the koftas in a bowl and mix together with your hands until well combined. Season well. Refrigerate for a few hours.
- When ready to cook, remove the kofta meat from the refrigerator and shape each around a skewer. The mixture should make around 12.
- Heat an oiled flat grill plate on high and cook the koftas for about 5 minutes on each side. Make sure the outside does not burn.
- Combine all ingredients for the yoghurt and refrigerate until ready to use.
- Using tongs, remove the koftas from the skewers once cooled slightly and place on a wrap.
- Fill the wrap with rocket, chopped tomato and onion and drizzle the yoghurt over the top.
