Low Carb Cashew Chicken
Looking for an easy and tasty meal? This low carb cashew chicken will do the trick ... packed with flavour and great for any time of the year!
Ingredients
- Chicken breast - 600g cut into 2 cm pieces
- Corn flour - 2 tablespoons
- Peanut oil - 2 tablespoons
- Shallots - 3 stems diced
- Cashews - 1/2 cup
- Honey - 2 tablespoons
- Chicken stock - 3/4 cup
- Soy Sauce - 1 tablespoon
Instructions
- Combine chicken, corn flour, soy sauce and honey in a bowl and mix well so that the chicken is well coated.
- Heat a wok on high and add peanut oil
- Add the chicken mix and stir until chicken browns evenly
- Once chicken is coated, add the chicken stock and reduce heat to a simmer.
- Let chicken cook through for 5 minutes. The sauce should start to thicken up and coat the chicken pieces.
- For the last 5 minutes, add the cashews and shallots and mix through. Don't overcook as you want some crunch and texture to the dish.
- Remove once cooked and serve with rice and lime wedges.
- Enjoy!

I don’t know what the go is but every time I try to stir fry with honey things stick to the pan and become gluggy. I added some more cornflour, honey and soy to make up for the dark clumps stuck together and it was ok but it didn’t look as delicious as the pic…
