Mini Savoury Loaf
This Mini Savoury Loaf is a great dense loaf packed full of flavour!
Ingredients
- Pumpkin - 2 cups, mashed
- Self Raising Flour - 2 cups
- Milk - 1/2 cup
- Butter - 80g
- Eggs - 2
- Feta Cheese - 50g
- Olives - 1
- Mixed Herbs - Pinch
- Pepper and Salt - Pinch
Instructions
- Preheat oven to 180 degrees
- In a Thermomix or food processor, add all ingredients except the flour, and blitz until smooth. You want to make sure that everything is blended.
- Pour mixture into a bowl and gradually start to stir in the flour until you get a dough-like texture.
- Split mixture into 3 sections and shape into a mini loaf.
- Pop onto a tray lined with baking paper.
- Bake for 45 mins to 60 mins until tops are golden brown.
- Serve with butter - delish!
