I Scream, You Scream, We All Scream For Mint Chocolate Chip Ice Cream!
Mint Chocolate Chip Ice Cream
One of the greatest ice cream flavour pairings ever made HAS to be mint and chocolate chip. Skip the parlour, you can make this one at home!
This recipe makes about 500ml of ice cream. That's enough for a family of five to have a scoop in a cone and not have any left in the freezer to fight over (handy for keeping the peace).
Ingredients
- Milk - 2/3 cup
- Sugar - 6 tablespoons
- Thickened Cream - 1 cup
- Vanilla extract - 1 teaspoon
- Peppermint essence - 1/2 - 1 teaspoon
- Chocolate - 50g, finely chopped
- green food colouring (optional) - 2 - 3 drops
Instructions
1. In a bowl, whisk together the milk and sugar, until sugar is dissolved.
2. Add the cream, vanilla extract, peppermint essence and food colouring (if using). Whisk to combine.
3. Process the mixture in your ice cream machine according to the manufacturer's instructions. Add the chocolate about 5 minutes before the ice cream is ready to come out. I use a Cuisinart machine and it takes around 20 minutes of churning to get to the freezer stage.
4. Pour the ice cream into a chilled bowl. Freeze for 2 to 3 hours before scooping into cones.
