One Pot Chicken Risotto
My husband loves risotto, but after work I dont always have the time to stand at the stove cooking it. This is very close to a risotto but without the stirring. One pot chicken risotto would have to be one of the easiest dishes you can make!
Ingredients
- Chicken breasts - 4
- Campbell's Chicken Soup - 2 cans
- Coconut milk - 1 can
- Chicken stock - 1 cup
- Onion - 1 diced finely
- Salt and pepper - to taste
- Rice - 2 cups (any type)
Instructions
- Preheat oven to 180 degrees
- Place all ingredients into a deep baking dish with a lid and pop in the oven for 20 minutes.
- After 20 mins turn the oven down to 160 degrees and cook for 1 hour
- Take the dish out and gently stir. The chicken should start to fall apart. Use a fork to gently shred and mix.
- Pop back in the oven for a further 30 minutes on low heat, the rice should be soft with liquid absorbed.
- Once cooked serve with Parmesan cheese!
