Orange Cake
Orange cake
This Orange cake is sure to be a hit with the family, great for afternoon tea!
Ingredients
- Orange Juice - 2 oranges
- Eggs - 3
- Melted Butter - 125g
- Milk - 1 cup
- Almond Meal - 1/2 cup
- Self Raising Flour - 1 1/2 cups
- Pure Icing Sugar - 1 1/2 cups, sifted
- Caster Sugar - 1 cup
- Orange Slices - To decorate
- Orange Icing
- Pure Icing Sugar - 1 1/2 cups, sifted
- Butter - 10g
- Orange Juice - 2 tablespoons
Instructions
- Preheat oven to 180°C
- Grease a loaf tin or any tin you like
- Place orange juice in a mixing bowl
- Stir in butter, milk, eggs, flour, sugar and almond meal until combined, mix well I normally add all ingredients to a themomix or mix master to make sure is well combined.
- Pour mixture into greased pan.
- Bake for 50 to 60 minutes or until a skewer is inserted and comes out clean.
- Stand cake in pan for 10 minutes.
- Turn onto a wire rack over a tray to cool.
Icing
- Place sugar, butter and orange juice in a bowl and use a mix master to combine until smooth water.
- Pop in the fridge for 10 minutes until it thickens
- Spread on cooled cake and top with thin orange slices or zest.
