Peach and Poppy Seed Muffins
Now you can have your fruit AND your cake. Peach and poppy seed muffins make for perfect afternoon tea fare.
Ingredients
- Self raising flour - 2 1/2 cups
- Caster sugar - 3/4 cup
- Poppy seeds - 1 teaspoon
- Butter, melted - 125g
- Eggs, lightly beaten - 2
- Zest of one orange
- 120g SPC Diced Peaches - 2
Instructions
1. Preheat the oven to 190°C. Line or grease a 12 cup muffin tin and set aside.
2. Sift the flour and sugar together and stir through the poppy seeds.
3. Add the butter and eggs to the dry ingredients and mix well.
4. Fold in the orange zest and diced peaches.
5. Spoon the batter into the greased / lined muffin tin and bake for 25 minutes, or until a skewer inserted in the centre comes away clean.
6. Serve warm and dusted with a little icing sugar. Enjoy!
