Prawn Tacos with Jalapeño Salsa
Ingredients
- Garlic - 2 cloves, minced
- Prawns - 500g, fresh - headless, shelled and deveined
- Lemon - 1, juiced
- Paprika - 1 tsp
- Dill - 2 tbsp
- For the salsa:
- Tomatoes - 6, sliced into small cubes
- Fresh coriander - 1 large bunch
- Red onion - 1, finely chopped
- Jalapeno - 2, finely chopped
- Garlic - 2 cloves, minced
- Lime - 2 small, juiced
- Olive oil - 2 tbsp
- Salt and black pepper
- To serve:
- Taco shells - 4, soft
Instructions
- Heat a large oiled pan to medium high heat.
- Add the garlic and cook for 2 minutes.
- Add the prawns, paprika and dill and cook for 1-2 minutes until just cooked. Take off the heat and squeeze over lemon juice.
- In a medium mixing bowl, add all salsa ingredients and mix well.
- Cut prawn meat into smaller bite sized pieces.
- Heat taco shells in a warm oven. Fill with salsa and prawns. Top with extra coriander.
