Watermelon Feta and Mint Salad
You can't beat a bowl of cool, juicy watermelon on a hot day. Take this fruit favourite to the next level with mint, feta cheese and a refreshingly zesty dressing!
It's important to note individual tastes vary, so mix the ingredients in this recipe according to your personal taste. Want more cheese? Go forth and add it! Not a fan of dressing? Leave it out!
Ingredients
- 1 watermelon, cubed
- fresh mint leaves, chopped - 1/2 cup to 1 cup, to taste
- Firm Feta cheese, crumbled - 100g - 200g, to taste
- Light tasting olive oil - 1/2 cup
- Limes, juiced - 3
- Salt & Pepper
Instructions
1. Cut the watermelon into generous bite sized pieces. Drain in a colander so excess juice can escape. Get busy chopping your mint and crumbling your feta cheese.
2. In a small bowl, combine the lime juice and olive oil. Season with a decent pinch of both salt and pepper to create a dressing.
3. Place the watermelon in a large bowl. Pour the dressing over the top and add the chopped mint. Toss gently to combine.
4. Add the feta cheese and again, stir gently to combine. Serve.
