Winter Dessert: Warm Caramelised Pineapple with Mint & Rosemary
Ingredients
- Pure Gold Pineapple - 1
- Honey - 1 tablespoon
- Lemon or Lime Juice - 1 tablespoon
- Melted Butter - 2 tablespoons
- Rosemary, leaves removed from stem - 3 sprigs
- Mint leaves - 1/2 cup roughly cut
Instructions
- Prepare the pineapple by coring and peeling it. Cut the flesh into slices about 2.5cm thick.
- Combine the honey, melted butter, and lemon/lime juice in a small bowl. Stir well.
- Place the pineapple into a container, add the rosemary and pour the marinade over the top. Refrigerate for up to 24 hours for the richest flavours. (Short cut: If you're in a hurry you can simply brush the marinade straight onto the pineapple before cooking.)
- Cook the pineapple on a grill. This could be your barbecue or a grill pan on your cooktop. Look for dark brown caramelisation this should 3-4 minutes per side.
- Toss the mint over the warm pineapple and serve immediately with vanilla-bean ice cream.
Recipe twist: For a more salty, savoury twist on this dish you can serve the pineapple with grilled haloumi instead of ice cream.
