Mexican Pork Fajitas
Ingredients
- Olive oil - 4 tbsp
- Lemon juice - of 1 lemon
- Garlic - 1 clove, crushed
- Salt and black pepper
- Dried oregano - 1 tbsp
- Ground cumin - 1 tbsp
- Garlic powder - 1 tsp
- Chilli powder - 1 tsp
- Paprika - 1 tsp
- Pork steak - 1kg
- Red capsicum - 1/2, deseeded and sliced lengthways
- Yellow capsicum - 1/2, deseeded and sliced lengthways
- Red onion - 1, sliced lengthways
- Fresh coriander - 1 large handful, roughly chopped
- Wholemeal tortilla wraps - 4-6
- Cheddar cheese - grated, to serve
- Sour cream - to serve
Instructions
- In a large resealable plastic bag, combine half of the oil, lemon juice, garlic and all seasonings.
- Add the pork steak(s). Make sure it is coated. Refrigerate for 1-4 hours.
- Heat a large skillet with the remaining oil. Cook the capsicum and onions for 4-6 minutes until just tender.
- Discard marinade. In the same skillet, cook the pork over a medium-high heat for 6 minute on one side and 4 minutes on the other. Leave to rest.
- Meanwhile, return the capsicum mixture to the skillet to reheat and warm the tortillas in the oven.
- Slice the pork into slithers.
- Fill the tortillas with the capsicum mixture and the cut pork down the middle. Fold in half and top with coriander.
- Serve with cheese and sour cream.
