Chilli Con Carne Recipe

Ingredients

  • Oil - 1 tbsp
  • Onion - 1 large
  • Garlic cloves - 2 crushed
  • Chopped tomatoes - 1 x 400g can
  • Chilli Powder - 1 tsp
  • Paprika - 1 tsp
  • Ground Cumin - 1 tsp
  • Sugar - 2 tsp
  • Beef mince - 500g
  • Kidney beans - 1 x 400g can
  • To serve:
  • Rice
  • Sour cream

Instructions

  1. Chop the onion into small cubes.
  2. Heat the oil in large pot on a medium high heat, add the garlic and then the onions and sweat down the onions until soft and translucent.
  3. Add the minced beef and cook for 5-7 minutes, while breaking up the mince with a wooden spoon.
  4. Once the meat is no longer pink, add in the canned tomatoes, chilli powder, paprika, cumin, and sugar. Stir until well combined.
  5. Drain the kidney beans and add the kidney beans. Bring the pot to a boil, then reduce to a simmer for 20 minutes, covered. Stir occasionally.
  6. Cook the rice according to the packet instructions.
  7. Serve on top of brown or white rice with a dollop of whipped cream.
