Choc Chip Blondies

Ingredients

  • Butter - 1/2 cup, melted
  • Demerara brown sugar - 1 cup
  • Egg - 1
  • Vanilla Essence - 1 tsp
  • Baking powder - 1/2 tsp
  • Pinch of salt
  • Plain flour - 1 cup
  • Chocolate chips - 1 cup

Instructions

  1. Preheat the oven to 180˚C. Grease and line a 9x13” square baking tray.
  2. Using an electric mixer, whisk together the butter, sugar, egg and vanilla essence until smooth and creamy.
  3. Sift in the flour, baking powder and salt and mix until well combined and there are no lumps. Add the chocolate chips and fold in, reserving a small handful to top the blondies.
  4. Pour the mixture into the prepared pan and spread evenly. Evenly sprinkle the leftover chocolate chips on top.
  5. Bake to 20 minutes. Allow to cool in the pan, then remove from pan and cut into squares.

These blondies are like a cross between a brownie and a chocolate chip cookie! Give them a go – and add whatever other mix-ins you’d like! Walnuts, macadamias, even chopped up chocolates like peanut butter cups would go amazingly with these slices of heaven.
