Choc Chip Blondies
Ingredients
- Butter - 1/2 cup, melted
- Demerara brown sugar - 1 cup
- Egg - 1
- Vanilla Essence - 1 tsp
- Baking powder - 1/2 tsp
- Pinch of salt
- Plain flour - 1 cup
- Chocolate chips - 1 cup
Instructions
- Preheat the oven to 180˚C. Grease and line a 9x13” square baking tray.
- Using an electric mixer, whisk together the butter, sugar, egg and vanilla essence until smooth and creamy.
- Sift in the flour, baking powder and salt and mix until well combined and there are no lumps. Add the chocolate chips and fold in, reserving a small handful to top the blondies.
- Pour the mixture into the prepared pan and spread evenly. Evenly sprinkle the leftover chocolate chips on top.
- Bake to 20 minutes. Allow to cool in the pan, then remove from pan and cut into squares.
