Fluffy Banana Pancakes
Ingredients
- Self raising flour - 1 1/2
- Baking powder - 1/2 tsp
- Sugar - 1/2 cup
- Eggs - 2
- Mashed banana - 250g (1 large)
- Milk - 1 1/2 cup
- Vanilla essence - 1 tsp
- Cinnamon - 1/2 tsp
- Butter - For frying
- To serve:
- Bananas - 2, sliced
- Cashews or walnuts - Roughly chopped
- Maple syrup
Instructions
- Add the flour to the baking powder. Stir in the sugar.
- In a separate bowl, whisk together the eggs, milk, vanilla essence and cinnamon. Add the wet mixture to the flour. Add the mashed banana. Whisk until smooth.
- Heat a large frypan over a medium heat. Add a knob of butter and melt in the pan, covering the pan’s surface. Pour about ½ a cup of mixture onto the hot pan, and cook for 2-3 minutes until bubbles appear on the surface and the outer sides are firm and able to be lifted. Flip and cook for another minute or two until golden brown. Repeat until all the mixture is used up.
- Top with bananas, your choice of nuts, and maple syrup before serving.
