Oreo cheesecake parfaits
Ingredients
- For the crumb:
- Oreos - 20, crumbed in a food processor
- Butter - 1/2 cup, melted
- For the cheesecake mix:
- Philadelphia cream cheese - 500g, softened
- Icing sugar - 1 cup
- Oreos - 10, crumbed in a food processor
- Thickened cream - 1 1/2 cup, chilled
- To serve:
- Oreos
- Whipped cream
Instructions
- For the crumb: in a mixing bowl, combine the Oreo crumbs with the melted butter to make the crumb.
- In a separate mixing bowl, combine the cream cheese, and half of the icing sugar. Whip until well combined. Add the Oreo crumbs and mix further until well combined.
- Place the thickened cream in a separate, clean mixing bowl. Whip the cream with a electric mixer until firm peaks are formed. Mix in the remaining icing sugar.
- In 8 tall serving glasses, layer each with first a layer of the Oreo crumb, then a layer of the Oreo and cream cheese mix, then another layer of the Oreo crumb. Then layer on the whipped thickened cream, followed by another layer of the Oreo crumb. Then layer with another layer of the Oreo and cream cheese mix.
- Chill the glasses for at least 30 minutes before serving.
- Top with whipped cream and more Oreos to decorate!
