Passionfruit Yogurt Cake
This Passionfruit Yoghurt Cake has a great texture and is delicious. Who would have thought yoghurt in a cake would taste so good?!
Ingredients
- Natural yoghurt - 1 cup (any flavour)
- Caster sugar - 1 cup
- Self raising flour - 3 cups
- Butter - 60g
- Eggs - 3
- Vanilla extract - 1 teaspoon
- Icing
- Passionfruit pulp - 4 tablespoons
- Icing sugar - 8 tablespoons
Instructions
- Preheat oven to 180 degrees
- Line a round tin with baking paper
- In a mix master cream the butter and sugar together
- Add the yoghurt, eggs and vanilla. Mix well
- Add in the flour. Mix well.
- Pour mixture into the baking tin and pop in the oven.
- Bake for 30-35 mins until top of cake is golden colour.
- Once cooked set aside to cool.
Icing
- Mix the passionfruit pulp and icing sugar together
- Pour over cooled cake, let it run over the edges
