Peanut Butter Cookies

Ingredients

  • Butter - 125g, softened to room temperature
  • Brown sugar - 1 cup
  • Peanut butter - 1/2 cup, smooth or crunchy
  • Egg - 1
  • Self raising flour - 1 1/2
  • Peanuts - (optional) 50g, roughly chopped

Instructions

  1. Preheat the oven to 160˚C.
  2. Using an electric mixer, beat together the butter, peanut butter, and sugar.
  3. Add the egg and mix to combine well.
  4. Add the flour a little bit at a time, then the peanuts and mix until a soft dough is formed.
  5. Form into medium sized balls and place on a lined baking tray, allowing room between each for them to spread.
  6. Press down on each cookie with a fork.
  7. Bake for 10-12 minutes until golden brown on the edges.
