Pulled Pork Burgers
Ingredients
- Pork shoulder - 1 kg
- Smoked paprika - 1 tbsp
- Garlic powder - 1 tbsp
- Dried oregano - 1 tbsp
- Cumin seeds - 1 tsp
- Salt - 1 tbsp
- For the coleslaw:
- White cabbage - 50g, shredded
- Red cabbage - 50g, shredded
- Red onion - 1/2 finely sliced
- Carrot - 1, grated
- Fresh coriander - 1 handful, finely chopped
- Lime juice - 2 tbsp
- Olive oil - 1 tsp
- Salt and black pepper
- To serve:
- White soft burger buns - 6
- Barbecue sauce
- Mayonnaise
Instructions
- Combine the paprika, garlic powder, brown sugar, oregano and salt in a small bowl.
- Rub the spices into the pork. Cover and marinate overnight or for at least 5 hours in the fridge.
- Preheat the oven to 110˚C.
- Transfer the pork shoulder onto a baking tray and cover with foil. Cook in the oven for 12 hours.
- Combine all the ingredients for the coleslaw and mix well.
- When the pork is done, shred using 2 forks. It should come apart easily.
- Serve in burger buns with coleslaw and barbeque sauce and mayonnaise.
