Can you use russet potatoes instead?

You could try. It says they’r good for baking – I think you’re better off looking for a roasting potato so the outside goes crispy 🙂

Oh please please please don’t show people to use the mandoline without a guard! I’ve been cooking for nearly 30 years and am quite good at it, but still managed to slice off the tip of my finger that way while making Christmas dinner 2014. I learned my lesson! Seeing this video with no guard used made me cringe though.

I was just thinking the same thing Heather. That is so dangerous. I sliced a chunk of my finger off a few years ago without using the guard, it was so foolish.

Can you freeze these for reheating later?

I’m not certain to be honest. I don’t know the outcome would be as crispy and dense as the fresh.

The video says to cook at 375 degrees and the recipe says 350. Which is it?
