Vanilla Pomegranate Panna Cotta
Ingredients
- Cream - 2 cups
- Sugar - 1/2 cup
- Vanilla pod - 1, split open and seeds extracted
- Gelatine powder - 1 tsp
- Pomegranate - 1 large, seeds extracted
Instructions
- Pour the cream into a small saucepan on a low heat. Add the sugar, vanilla seeds and the vanilla pod. Allow to simmer for 10 minutes.
- Dissolve the gelatine in 2 tablespoons of boiling water.
- Remove the vanilla pod. Add the gelatine and stir until dissolved.
- Pour the panna cotta into 4 small glasses or ramekins.
- Refrigerate for 4 hours.
- Once set, decorate with pomegranate seeds and mint leaves.
