Family Food Fast: Chicken and Pineapple Stir Fry
Ingredients
- fresh pineapple - 1/2 skinned, cored and cut into chunks
- chicken breasts - 4 diced into cubes
- orange capsicum - 1/2 chopped in strips
- sunflower oil - 40ml
- onion - 1 chopped
- garlic clove - 2 chopped
- tomato sauce - 6 tablespoons
- brown sugar - 2 tablespoons
- white wine vinegar - 2 tablespoons
- cashew nuts - handful
- Spring onion - to garnish (optional)
- sesame seeds - to garnish (optional)
Instructions
- Using a heavy-based frying pan or a wok, heat the oil.
- Add the chunks of pineapple and cook over high heat for 3-4 minutes until browned and slightly softened.
- Remove the pineapple with a spoon and place to side.
- Add the onion, capsicum and garlic, stir frequently over high heat until softened.
- Add the chicken. Stir fry until fully cooled through.
- Re-add the pineapple to the wok with the cashew nuts.
- Combine the tomato sauce, brown sugar and vinegar in a small bowl, mix well to make a sauce.
- Pour the sauce into the wok and over ingredients, tossing them through until coated.
- Season with salt and black pepper to taste. Serve hot with rice or noodles and garnish with sesame seeds and spring onion as preferred.
