Peanut Butter Cookies
Ingredients
- Butter - 125g, softened to room temperature
- Brown sugar - 1 cup
- Peanut butter - 1/2 cup, smooth or crunchy
- Egg - 1
- Self raising flour - 1 1/2
- Peanuts - (optional) 50g, roughly chopped
Instructions
- Preheat the oven to 160˚C.
- Using an electric mixer, beat together the butter, peanut butter, and sugar.
- Add the egg and mix to combine well.
- Add the flour a little bit at a time, then the peanuts and mix until a soft dough is formed.
- Form into medium sized balls and place on a lined baking tray, allowing room between each for them to spread.
- Press down on each cookie with a fork.
- Bake for 10-12 minutes until golden brown on the edges.
