Chilli Con Carne Recipe
Ingredients
- Oil - 1 tbsp
- Onion - 1 large
- Garlic cloves - 2 crushed
- Chopped tomatoes - 1 x 400g can
- Chilli Powder - 1 tsp
- Paprika - 1 tsp
- Ground Cumin - 1 tsp
- Sugar - 2 tsp
- Beef mince - 500g
- Kidney beans - 1 x 400g can
- To serve:
- Rice
- Sour cream
Instructions
- Chop the onion into small cubes.
- Heat the oil in large pot on a medium high heat, add the garlic and then the onions and sweat down the onions until soft and translucent.
- Add the minced beef and cook for 5-7 minutes, while breaking up the mince with a wooden spoon.
- Once the meat is no longer pink, add in the canned tomatoes, chilli powder, paprika, cumin, and sugar. Stir until well combined.
- Drain the kidney beans and add the kidney beans. Bring the pot to a boil, then reduce to a simmer for 20 minutes, covered. Stir occasionally.
- Cook the rice according to the packet instructions.
- Serve on top of brown or white rice with a dollop of whipped cream.
