Watermelon and Kiwi Chia Popsicles
Ingredients
- Watermelon - 4 cups, diced with seeds and rind removed
- Lime juice - 2 tbsp
- Sugar - 2 tbsp
- Fresh mint - a handful
- Chia seeds - 2 tbsp
- Kiwi - 1, diced
- Plastic cups - 4, small
- Popsicle sticks - 4
Instructions
- Blend the watermelon, lime juice, and sugar in a blender until smooth.
- Bruise the fresh mint and add to the liquid. Add the chia seeds and kiwi and stir.
- Pour the liquid into 4 small plastic cups and place in the freezer.
- After about 30 minutes, when the liquid is partially frozen, stick the popsicle sticks into the centre of the cup.
- Freeze for a further 2 hours or until solid.
